METHOD OF PREPARATION
Made using the traditional or Champenoise method, which consists of taking foam
carried out by a second fermentation in bottles.
VARIETAL COMPOSITION
Pinot Noir: 60%
Chardonnay: 40%
SOILS
Sandy loam with pebbles, of medium to low fertility, with a low percentage of material
Organic. Well drained and low salinity.
HARVEST
It was harvested manually in 18-kilo boxes.
GUARD
This wine, once the first winter has passed, is put into bottles to begin the second.
fermentation and then remains in contact with its yeasts for 12 months before being
beheaded.
