VINIFICATION
Harvest carried out in 20 kg boxes.
Traditional production : Cold pre-fermentation maceration for 3 days.
Fermented in cement vessels without epoxy for 20-23 days. Work on

fermentation at 25° C.
First stage of aging in French oak barrels of 225 and 500 liters. and a
second stage of aging in 3,500-litre casks for a total of 18 months.
